I installed the gibertini disk 100 with an lnb Inverto 5928 ultra high-gain single lnb
How come the feeds present fta at 7 degrees east I receive them very well with signal and average quality almost always at 90% while all the feeds of temporary sports events with a power almost always over 90% while the quality fluctuates between 63% and 69% ???

In your screen captures, the parameter that defines if the frequency can be locked is the "Quality" indicator.
The signal level from a feed is determined by the power used by the individual uplink crews when they transmit it up to the satellite. They have the option to set this at whatever signal level they want and often set it on the low side to KO the feed men. They do not care if it KO's the feed men as long as their receiving dish back at their studio base can receive the signal and that dish is likely to be a big wan.
Normal TV frequencies on satellite that are intended for home viewer direct reception are generally more powerful signal level as they need to be received by viewers/subscribers.
Just because frequencies come from the same satellite does not mean they are all equal in signal level, they can vary quite a lot.
The other point to consider is which footprint beam from the satellite is being used for the transmission, some beams are more powerful than others from the same satellite.
There is no single parameter to consider, there are a number of factors.
